Vegetarian Chili

Craving to eat chili but you can’t because of the points? Here is a Weight Watcher alternative for you. Vegetarian chili hits the spot if you are looking for a spicy dish. The texture gives off a nice feel in the palate as everything is there except the meat. But, worry not, this dish is packed with beans and tomatoes to keep you full.


2 tbsp olive oil
4 cloves garlic, minced
1 onion, diced
1/2 green bell pepper, diced
1 large can diced tomatoes
1 can black beans
1 can kidney beans
2 cups water
2 vegetable bouillon cubes
1/2 tsp ground black pepper
1 tsp cayenne pepper
2 tsp chili powder
1 tsp dried oregano
salt to taste
Avocado wedges for garnish


  1. Set Ninja Foodi to SAUTE and saute garlic, onion and bell peppers in oil.
  2. Cook for 3 to 5 minutes or until vegetables caramelize.
  3. Add beans and diced tomatoes and continue stir frying for a minute.
  4. Add in all remaining spices and seasonings.
  5. Pour water and secure Pressure Lid.
  6. Set Pressure to HIGH and set TIME to 15 minutes.
  7. Once cycle is done, do a Natural Pressure Release for 10 minutes.
  8. Check if there is still some pressure left by doing a Quick Pressure Release.
  9. Serve with optional toppings of diced onions and avocado wedges.
