Thai Peanut Chicken

Thai dishes are known for a blend of exotic flavors that explode in your taste buds. This recipe is nothing short of flavors. With a peanut butter based sauce, it is rich in spices with a tangy twist from a dash of lime juice.


2 tbsp ghee
2 cloves garlic, minced
1 inch ginger, minced
2 lbs boneless, skinless chicken thighs
2 tsp fish sauce
1/2 cup sweet soy sauce
3 tbsp minced cilantro
1 tsp red pepper flakes
1/2 cup chicken broth
1/2 cup creamy peanut butter
2 tbsp lime juice
1 tbsp cornstarch
2 tbsp water
1/2 cup chopped peanuts


  1. Set Instant Pot to Saute, heat oil and stir fry garlic until brown.
  2. Add ginger and stir fry for 1 to 2 minutes.
  3. Stir fry chicken for 3 to 5 minutes and add fish sauce.
  4. Add soy sauce, cilantro and pepper flakes.
  5. Stir continuously and deglaze with chicken broth.
  6. Allow to simmer for 5 minutes and add peanut butter and lime juice.
  7. Secure lid, set pressure to HI and set time to 10 minutes.
  8. Once cycle is done, do a Quick Pressure Release, open lid and set Instant Pot to Saute.
  9. Dissolve cornstarch in water and stir in to thicken the sauce.
  10. Serve peanut chicken with rice and sprinkle with chopped peanuts
