Thai Coconut Beef Curry

Curry dishes usually take a lot of time and effort to make. With all the spices and ingredients to make the sauce, a lot of us get discouraged and just end up cooking the usual dishes. It is not the case with the easy to prepare Coconut Beef Curry. With basic ingredients, you are done in a couple of steps!

Ingredients

3 lbs boneless chuck roast
1 tsp salt
1 tsp pepper
2 tbsp ghee
1 red bell pepper, sliced
1 inch ginger root, minced
1 cup beef stock
1 can coconut milk
1/2 cup red curry paste
3 tbsp honey
1/2 cup creamy peanut butter
2 tablespoons sweet soy sauce
1 cup snap peas
2 tbsp minced cilantro

Directions

  1. Season beef with salt and pepper and let sit for 30 minutes.
  2. Set Instant Pot to Saute, heat oil and sear all sides for beef.
  3. Add pepper, minced ginger, and pour stock and let simmer.
  4. While beef is simmering, in a bowl, mix coconut milk with red curry paste, honey, peanut butter, and soy sauce. 
  5. Add curry sauce to Instant Pot and secure lid. Set to HI pressure for 30 minutes.
  6. Do a Quick Pressure Release, open lid and add snap peas. 
  7. Secure lid, set to HI pressure for 5 minutes.
  8. Do a Quick Pressure Release, open lid, and remove beef.
  9. Cut beef into strips, return to Instant Pot and add minced cilantro.
  10. Serve and enjoy!
