Shrimp Curry

This Shrimp Curry dish has a creamy coconut sauce which is perfect for white rice and is ready in less than 30 minutes! Very easy to make, with basic cupboard ingredients, every bite is an explosion of exotic flavors in your mouth. 


1 lb raw medium-large shrimp, peeled and deveined
2 tbsp ghee
1 sprig fresh curry leaves
1 tsp ginger-garlic paste
1 small onion, sliced
1 large tomato, chopped
1/2 tsp ground turmeric
2 tbsp water
2 tbsp Kashmiri red chili powder
1 tbsp coriander powder
1/2 tbsp cumin powder
2 cups water, divided
4 tablespoons coconut cream
salt to taste


  1. Set Ninja Foodi to SAUTE and allow to heat up. 
  2. Add ghee, ginger garlic paste, onions, and curry leaves. Stir fry continuously to prevent burning in the pot. 
  3. Add onions, tomato and turmeric.
  4. Mix Kashmiri red chili powder, water, cumin and coriander in a small bowl.
  5. Once mixture is even and pasty in consistency, add it to the stir fry.
  6. Continuously tir for 3 to 5 minutes until oil starts to ooze out.
  7. Add 2 cups of water and let it simmer for 2 minutes.
  8. Add shrimp, secure pressure lid, select PRESSURE and set to HIGH, then set time to 3 minutes, finally press START/STOP.
  9. Once cycle is done, quick release pressure.
  10. Set to SAUTE mode again and stir coconut cream into the curry. 
  11. Simmer for 3 to 4 minutes until sauce thickens.
  12. Season with salt and pepper
