Ninja Foodi Weight Watchers Recipe

Shrimp and Broccoli

This recipe is a perfect example of a low-fat, high-protein, highly enjoyable dish. Great for Weight Watchers, the recipe is a complete meal in itself. Both healthy and delicious, this meal is easy to prepare, and takes no time in the kithen, especially with your pressure cooker.


3 cups, uncooked broccoli florets
2 tsp extra-virgin olive oil, divided
1/3 cup lemon zest
1 tsp salt
1 lb uncooked shrimp, peeled, deveined
3 cloves garlic, minced
1/2 cup chicken broth
1 tsp fresh lemon juice


  1. Combine shrimp, broth olive oil, lemon zest, salt, garlic, and lemon juice at the base pan of stackable pan set.
  2. Stack steamer pan on top of the base pan, and evenly spread broccoli florets. 
  3. Place pan lid on top and secure stackable pans with sling handle.
  4. Pour water in inner pot and put stackable pans inside.
  5. Secure lid and set to sealing.
  6. Set Instant Pot to HIGH pressure for 1 minute. 
  7. Once timer is up, do a Quick Release of pressure by pressing down the Steam Release Button until it locks into place.
  8. Once all pressure and steam is released, Remove stackable pans.
  9. Transfer broccoli florets on a serving dish and top with shrimp and sauce
