Salsa Chicken

Salsa Chicken
2 lbs 4 fresh chicken breasts
15 oz jar salsa
1/2 chicken broth
1 cup fat-free Greek yogurt

  2. Place chicken breasts into the pot.
  3. Pour chicken broth and top with salsa,
  4. Secure the pressure lid, set set Pressure to HIGH and set TIME to 10 minutes.
  5. Once cycle is done, quick release the steam and open lid. 
  6. Open the lid, set to SAUTE and let the sauce simmer for 3 minutes.
  7. Using a strainer, remove the chicken and let the sauce drip back into the pot.
  8. Allow chicken to cool then shred with 2 forks.
  9. Return shredded chicken back into the pot and stir in yogurt.
  10. You may serve the dish as is or with tortillas but of course this will have additional points.
