Red Thai Chicken Curry

There are a lot of variations of Chicken Curry, and the best one really depends on your taste. If you are into hot and spicy foods, and you like bell peppers, then Red Thai Chicken Curry is the best option for you. It is a savory, coconut-based recipe spiced up with Red Thai Curry paste.


1 ½ pounds boneless chicken thighs
1 tbsp ghee
2 tbsp red curry paste, or more to taste
1 can unsweetened coconut milk
2 tbsp fish sauce
1 tbsp sugar
1 red onion, sliced
1 bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced


  1. Set Instant Pot to Saute, add oil and stir fry onions
  2. Add curry paste and saute for 1 minute.
  3. Add chicken and stiry fry for 5 minutes.
  4. Continue stir frying and add fish sauce and sugar.
  5. Add coconut milk and stir for a minute.
  6. Secure the lid and set pressure to HI for 8 minutes.
  7. Quick release pressure and once all pressure is released, open the lid and add bell peppers.
  8. Set to Saute and cook the bell peppers for 2 to 3 minutes.
  9. Serve Red Thai Chicken Curry with choice of rice.
