Pork Tenderloin with Beets and Chickpeas​

Yes, pork tenderloin is healthy as is it full of essential vitamins and minerals. It is rich in thiamin, niacin, selenium and vitamin B6. Furthermore, it is rich in vitamin B12, potassium, iron, magnesium and zinc.

Beets on the other hand is rich in potassium, betaine, magnesium, folate, and Vitamin C. It is also a good source of nitrates. This vegetable is great for people with high blood pressure and anemia. It also improves cognitive function.

Chickpeas are a good source of minerals and fiber and aids in digestion.They are high in protein and helps in weight management.

Take note, you need to soak the chickpeas in water overnight.  This softens the chickpeas before boiling. Pre-soaking also makes the chickpeas easier to digest. Simply wash, drain, and soak in the fridge the night before.

Pork Tenderloin

2 lbs pork tenderloin
1 tbsp salt
10 tbsp liquid smoke
2 tbsp Worcestershire sauce
1 tsp ground black pepper


For Chickpeas
1 cup chickpeas soaked overnight
3 cups water

Shredded Beets

1/2 lb shredded beets
1 tbsp butter
1/2 cup water
2 tbsp balsamic vinegar
1 tsp salt
1 tsp ground black pepper


  1. Comibne all Pork Tenderloin ingredients in the bottom Chiboz cookware regular pan
  2. Combine all the shredded beets ingredients in the middle Chiboz cookware regular pan
  3. Comibine water and chickpeas at the top Chiboz cookware regular pan
  4. Pour 1 cup water in Instant Pot and Stack pans on top of each other inside it.
  5. Secure lid and set to sealing and set Instant Pot to HIGH pressure for 20 minutes.
  6. Once timer is up, do a Quick Release of pressure by pressing down the Steam Release Button until it locks into place.
  7. Open lid and remove the stack pans.
  8. Serve and enjoy!
