Green Thai Chicken Curry

Are you into green and leafy veggies? Do you like curry? How about Thai foods? You may answer yes or no to any or all of these questions, but one thing is for sure, this dish is delish. Green Thai Chicken Curry is a rich tasting coconut based curry dish that has a lot of green veggies in it. Flavorful, creamy, spicy, and fresh. Try it out yourself.


1 ½ pounds boneless chicken thighs
2 tbsp ghee
3 tbsp Thai Green curry paste
2 tbsp fish sauce
1 tsp coriander powder
1 tsp cumin powder
1 can coconut milk
1/4 cup chicken broth
1 tbsp brown sugar
1 tbsp lime juice
1 green bell pepper, sliced into strips
1 red onion, choppped
1/2 cup bamboo shoots, sliced
1 zucchini, sliced into strips
5 lime leaves
1/4 cup Thai Basil leaves


  1. Set Instant Pot to Saute and add ghee
  2. Stir fry coriander and cumin for half a minute.
  3. Add green curry paste and stir fry for a minute.
  4. Add chicken and saute with fish sauce.
  5. Pour coconut milk continuously stir until the sauce simmers.
  6. Add chicken broth.
  7. Secure lid and set pressure to HI for 5 minutes.
  8. Do a Quick Pressure Release and open the lid once all pressure has been released.
  9. Set to Saute, add brown sugar, lime juice, bell peppers, onions, bamboo shoots, zucchini, and lime leaves.
  10. Switch Instant Pot off and add in basil leaves.
    Serve with Jasmin rice
