Instant Pot Weight Watchers

Chicken w/ Fresh Herbs and Lemon

Fresh. This is one word to  describe this dish. Chicken with fresh herbs and lemon is one of the best weight watchers recipes that you can easily prepare in your Instant Pot. The lemon gives a citrusy feel and the herbs bring out the best in the chicken’s white meat. Tender, juicy, oozing with flavors, it almost seems like this is not a healthy dish at all.


2 lbs chicken quarter legs
1 tsp salt
1 tsp black pepper
1 tsp olive oil
2 tsp freshly squeezed lemon juice
3 tbsp chopped rosemary
3 tbsp chopped parsley
1/2 cup chicken broth
1 lemon quartered


  1. Put chicken in an insert pan and season with salt and pepper.
  2. Drizzle with olive oil, sprinkle lemon juice and herbs.
  3. Pour broth in inner pot and place insert pan on top of trivet.
  4. Secure lid and set to sealing.
  5. Set Instant Pot to HIGH pressure for 10 minutes. 
  6. Once timer is up, do a Quick Release of pressure by pressing down the Steam Release Button until it locks into place.
  7. Once all pressure and steam is released, transfer chicken and sauce with herbs on a serving dish.
  8. Serve with fresh cut lemons.
