Creamy Mac N Cheese

Ingredients
- 1 lb macaroni
- 1 cup water
- 1 can evaporated milk
- 1/4 cup butter
- 3 ½ cup cheddar cheese, shredded
- 2 cups fontina cheese, shredded
- ½ cup parmesan, grated
- ½ tsp smoked paprika
- ½ tsp ground mustard
- ground black pepper to taste
- kosher salt to taste
Instructions
- Place macaroni inside steamer basket. No need to use partition.
- Fill Instant Pot with 1 cup water, place steamer rack, and then the steamer basket on top of it.
- Secure lid and set to sealing.
- Set Instant Pot to HIGH pressure for 12 minutes.
- Once timer is up, do a Quick Release of pressure by pressing down the Steam Release Button until it locks into place.
- Once all pressure and steam is released, Remove steamer rack and let all fluids drain.
- Drain Instant Pot and set to Sauté.
- When Instant Pot displays “Hot” melt butter and saute mustard and paprika.
- Stir in milk and cook while continuously stirring for two minutes.
- Add cheeses and keep stirring until sauce is even. and season with salt and pepper and switch Instant Pot off.
- Allow to rest for a few minutes before serving.
Creamy Mac N Cheese
Ingredients
- 1 can evaporated milk
- 1 can sweetened condensed milk
- 6 eggs
- 2 tsp vanilla extract
- 2 cups sugar
- 1 8oz pack cream cheese
- 1 cup granulated sugar(for caramel)
Instructions
- Prepare Spring Form Pan and place near the Instant Pot.
- Set inner pot to saute, heat sugar in medium heat and stir constantly.
- Keep stirring until sugar turns golden brown and starts dissolving
- Bubbles will emerge as the sugar crystals dissolve. At this point, the caramel is still clumpy so keep stirring.
- Once all sugar has been liquefied, immediately pour in the cake pan and spead evenly at the bottom.
- In a matter of seconds, the liquefied sugar will harden so you have to spread it quickly. Let it rest while preparing the flan.
- Using a blender or a hand mixer, combine evaporated milk, condensed milk, vanilla extract, sugar, eggs, and cream cheese. Make sure your flan mix is fully blended to give it a smooth and even texture.
- Pour flan mixture over the caramel coated spring form pan.
- Cover spring form pan with foil, pour 3 cups water in Instant Pot and place trivet at the bottom. Put the dessert pan on top of the trivet.
- Secure lid and set to sealing and set Instant Pot to HIGH pressure for 14 minutes.
- Once timer is up, hit the “Keep Warm/Cancel” button to switch off the Instant Pot. Allow full NPR(Natural Pressure Release). Pin will drop once all pressure has been naturally released.
- Open lid and remove the pan and set on the counter to cook for 20 minutes. Regrigerate for 3 hours before serving.
- To serve, scrape the sides of the push pan with a silicone spatula and remove side cover of spring for pan.
- Turn the pan upside down on a serving dish and push the bottom to drop the flan on the dish.
